Caribbean Stewed Chicken

A comforting island classic โ€” rich, golden, and kissed by spice.

Ingredients:

2ยฝ lbs chicken (cut into serving pieces)

2 tbsp brown sugar

2 tbsp vegetable oil

1 medium onion, chopped

3 cloves garlic, minced

1 pimento or chili pepper, chopped (optional)

1 tomato, diced

1 tsp salt

ยฝ tsp black pepper

1 tsp paprika

2 sprigs fresh thyme

1 green seasoning mix (optional)

1ยฝ cups water or chicken broth

1 tbsp ketchup (for a touch of color and balance)

Directions:

1. Season with love.
Wash and clean the chicken pieces with a little lime juice or vinegar. Season with salt, black pepper, paprika, thyme, and green seasoning. Let it marinate for at least 30 minutes โ€” overnight if you want deeper flavor.

2. The caramelization magic.
In a heavy pot, heat oil on medium. Sprinkle in the brown sugar and watch closely as it melts and turns dark golden brown. This is your island โ€œbrowningโ€ โ€” the foundation of that rich stew color.

3. Add the chicken.
Carefully place the seasoned chicken pieces into the caramelized sugar. Stir gently to coat and allow each piece to brown for 5โ€“7 minutes.

4. Build the flavor base.
Add chopped onions, garlic, tomatoes, and pimento. Stir and let everything simmer together for another few minutes until fragrant.

5. Simmer to perfection.
Pour in your water or broth, reduce the heat, and cover the pot. Let it simmer for about 25โ€“30 minutes until the chicken is tender and the sauce thickens beautifully.

6. Taste and finish.
Adjust seasoning, add ketchup if desired, and cook for another 5 minutes.

Serving Suggestion:

Serve hot with white rice, ground provisions, or fried plantains.
Add a fresh cucumber salad on the side for a refreshing balance.

Story Behind the Dish:

Every pot of stewed chicken in the Caribbean carries a memoryย  Sunday lunches, laughter echoing through kitchens, the smell of caramelized sugar signaling love in motion. Itโ€™s not just food; itโ€™s home in a bowl.
